Fresh carrots in the middle of winter? You betcha!
I have left carrots in the ground as late as March…but they got a little buggy and hairy. Still edible though.
This year’s carrots are getting a few root hairs but they are still tender, sweet and juicy! I think I’ll be finished them by the end of February and if not I’ll probably pull what’s left to store in the fridge.
I’m wondering if it’s a difference in variety that keeps better. Mine are Yaya (I think). They are not advertised as a winter carrot but I’ve always had great luck with them in all seasons.
